Paint job #2 is close and the shop owner posed a question I can't answer...

This isn't the best picture as this image is tough to capture.... but do the '57 bodies tend to bow just a bit from end to end on each panel being quarter, door and fender? My fenders are new aftermarket with doors/quarter being original. This bow being just relative in considering how new cars tend to be laser straight on the sides today. It becomes noticeable when the door/front fender trim is applied which is pretty horizontally true. I'm expecting (hoping) it is as I can't imagine I happen to have each panel out-of-shape.

The quarter panel and door are normal, but the fender is way off.

Lee, good eye... the pax fender is worse than the other side. But you would say the door and quarter are about as expected?

The sides of 55-57 Chevys is often called the tri-bump. Each panel is slightly pregnant. Even the stainless was made to conform to this. That said, the front fender I see is to much so.

If you attempted to flattin the sides you would need to shrink the middle on most panels 1/2 inch. I have seen the "fix" is to "mud" the outsides and cut the line for the edge. Problem with this is the door edge can get real thick.....

What I did to reduce the dip at the gaps was to bend the edge of the door out and mud between the edge toward the middle to flatten it out some. This kept the edge thin and eleminated any filler right at the edge.
You can see it a little on this picture between the front door and fender, taken in 1958.

The front fenders ballooning out is common. This is caused due to the radiator support bushing dropping placing pressure on the front end causing the fenders to pop out.
