I'm trying to find information on the correct speedometer gear to use in the tailshaft housing on the turbo 350 trans in my Nomad.

There is a 3.36 gear in the rear, and the rear tire is 225 75 15.

Something to do with rear end ratio and tire circumference I'm sure, I just don't know what it is.

At 75 mph on the Nomad speedo the car is running along at 60 mph.

I would go to my local Chevy dealer and buy drive & driven gears for a 77 Z28 with G70-15s, 342 rear gears & a TH350. I bet this gets you where you need to be, I have done it this way many times.
