I am having some problems with my temporary guage. When I hook the wire up to the sending unit at room temperature it reads about half or normal opporation temp. But once the motor starts to warm up the guage goes to hot and pegs. Is it possible that I have the wrong resistance temp sending unit?

VERY possible. The sender has to match the gauge.

Would anyone have any kind of part number or ideas witch temp sending unit I need to go with the oem 1579 chevy apache gages?

You might try a AC Delco G1852 or AirTex Wells 1T1053.
If those do the same thing exchange it for a AirTex Wells 1T1063.
Passenger cars changed the gauge and sender between 1956 and 1957. I don't know if trucks also changed.
