Seam Sealer

I have noticed after watching some of the car restoration shows that they use seam sealer on welded seams after they've cleaned evrything up . My question is why use seam sealer when you can Prime and paint these areas ? Even though these are usually areas that are covered by fenders etc,the seam sealer looks really rough .Any ones help is appreciated as I'm going to be working my 57 body and removing some seam sealer to weld etc . It depends on the type of weld seam you have If you do a complete butt weld and grind it down, you don' tneed seam sealer. But if you do a lap weld or spot weld flanges, you need it to seal the joint. I don't see any need to put sealer on a fully welded seam. But primer won't seal a seam either.
